TAAN Bangkok’s 13-course HARVEST: regional Thai flavours in contemporary forms

Discovering Thai food need not begin with the most familiar stir-fries. At TAAN, on the 25th floor of Siam@Siam Design Hotel Bangkok, chef Monthep Kamolsilp’s 13-course HARVEST menu connects regional ingredients with contemporary forms. At THB3,990++ per person, it is a sequenced meal and a chance to ask what remains recognisable when a local dish leaves its usual table.

Follow flavour before identifying a dish by appearance

Embers of the North brings northern meat-spice references together with Thai wagyu on a marshmallow. Instead of first asking whether it still looks traditional, consider how spice, fat and sweetness are organised into one bite. A familiar flavour pattern can survive on a different base, but this remains a restaurant interpretation rather than the only version of home cooking.

Where The Mountains Meet uses a glutinous-rice wrapper for lamb and a northern mixed-curry idea, adding crisp noodles. For readers new to regional Thai food, three threads—ingredients, seasoning and texture—are easier starting points than memorising every transliterated name.

How does the menu change rhythm from north to south?

The menu also references Tak’s bean curry and southern roast pork. The Five Little Pigs combines roast pork, stink beans and roasted durian elements, redistributing the roles of meat, legumes and fruit. Those ingredients already have varied local uses; the restaurant offers its own combination rather than claiming one dinner represents all of Thailand.

Thirteen courses allow snacks, mains and desserts to change pace gradually. Watch not only the most striking plate but also how one bite leads to the next, when staples enter and how dessert closes the meal. This way of reading a menu offers concrete questions for staff without requiring professional culinary knowledge.

What does THB3,990++ mean when booking?

TAAN’s official menu lists HARVEST as 13 courses at THB3,990++ per person, alongside other lengths and vegetarian options. The ++ means the displayed number is not the final bill: confirm service charge, tax, drinks and pairings. Check each version separately rather than assuming a shared HARVEST name accommodates every dietary requirement.

The address is 865 Rama I Road, Siam@Siam Design Hotel Bangkok, near National Stadium station, with published daily hours of 6pm–11pm. Explain allergies or other restrictions in advance and ask how long to allow. Large windows and an open kitchen in official imagery offer two viewing directions, city and service. Actual seating and sightlines remain subject to the reservation, not guaranteed by a photograph.
