From a food truck on the beach in Toucheng to the second floor of a department store in Dazhi — it's taken sunburn. years to get here. In 2026, founder Alex is bringing years of travel, work, and surfing experience from California, Australia, Bali, and Taiwan's east coast into the second floor of NOKE Mall in Taipei, opening the brand's first permanent space.

The menu grew out of that same journey: European-style handmade sausage hot dogs, daily fresh-cut fries made slow, plus nitro coffee, plant-based drinks, and a handful of cross-brand collaborations. There's no fixed way to use the space — grab a quick meal, have a drink with friends, or just sit and do nothing at all.


A mix of tables and seating, with no rules on how long you can stay

Now settled on the 2nd floor of NOKE Mall, sunburn. positions itself as a Fast-Casual lifestyle dining space. Want to grab a hot dog and go? Fine. Want to sit down slowly, sip a coffee, split a drink, and lose an afternoon to the music? Also fine. Unlike traditional restaurants built around full meal service, sunburn. cares more about how the space gets used, and how eating fits into the rhythm of a day. Whether it was the food truck or now a storefront, one thing hasn't changed: Slow Down. Stay Longer.

One hot dog, five parts, each one built right

The hot dog sits at the core of the menu, but it's not just sausage stuffed into bread with toppings piled on top. Every element — sausage, bun, pickled toppings, and sauce — has been rethought individually, not to add more, but so the ingredients' original flavors and the balance between them come through in every bite.

Start with the sausage. Made with CAS-certified fresh Taiwanese pork, hand-trimmed of connective tissue, and stuffed into natural pork casing with rock salt and select spices — no preservatives, no nitrites, no sugar, no breadcrumbs, no artificial binders. The aroma and bite come entirely from the quality of the meat, the fat ratio, and the craft of the process.

The bun that holds it all is developed by a Tokyo Cordon Bleu-trained chef. The dough is made with Canadian wheat flour, house-cultivated wild yeast, whole egg, and cream — soft but sturdy enough to soak up juices and sauce, while keeping a hint of wheat, egg, and butter aroma.

The remaining three elements open up the flavor: a secret-recipe pickled red onion made slow by Alex's wife using a family recipe, bringing bright acidity through natural spices and organic fruit vinegar; heart-shaped chili peppers from Taiwan's east coast, pickled using traditional Indigenous methods, adding spice, savoriness, and fermented depth; and a sweet-tangy fruit sauce hand-made from ripe yellow plums from southern Taiwan, using natural fruit acidity to balance the fat, so salty, savory, sour, and sweet all land at once. Cilantro plays a quiet supporting role, drawing a clear herbal line through it all.

No frozen fries here — fresh-cut and fried daily

Beyond the hot dog, another thing made fresh every day is the slow-cut fries. No frozen potatoes — imported potatoes are hand-cut fresh daily, put through multiple processing and aging steps, then fried at low temperature in a custom blend of Taiwanese fresh butter. Crispy on the outside, soft and full of potato flavor inside — something usually treated as a side dish, made memorable on its own here.

Five Taiwanese brands, filling out every part of the day

Beyond its own food, sunburn. has brought in five distinctive Taiwanese brands, covering bread, coffee, tea, and drinks to round out the offerings for any time of day.

Good Cho's supplies the bagel base, which sunburn. builds on with its own spreads and desserts; Ruins Coffee Roasters uses specialty beans to craft a smooth, velvety nitro coffee; Shan Sheng You Xing brings Taiwanese fragrant-smoked specialty tea into a nitro tea series; and Draft Land brings its refined mixed-drink flavor system in, turning bar culture into something more everyday and relaxed. sunburn. has also worked with Greenergize to co-develop two exclusive plant-based functional drinks, built on natural plant nutrition, giving fitness-minded, body-conscious guests another way to top up their daily nutrients.
