She Never Went to Culinary School, Yet She Cooked Up Robert Downey Jr.'s Fully Vegan Menu

At 23, she submitted a menu proposal, only being told the client was "a Hollywood actor," with the requirements being gluten-free and fully vegan. It wasn't until she was selected that she found out she'd be preparing daily meals for Robert Downey Jr. during his shoot in Thailand. "When I sent in the menu, I had no idea who the client was. Once I found out it was him, I thought: is this for real?"

This is the story Patcharamon "Fah" Charoenchai is best known for, but her whole path has never followed convention. No one in her family worked in food service—she studied Communication Arts at Chulalongkorn University before appearing as a contestant on MasterChef Thailand Season 4. Her run on the show ended earlier than expected, but it confirmed for her that cooking takes more than just skill—it takes stability and confidence. She never attended culinary school; everything she knows came from teaching herself, trial and error, and asking one more question than most people would.

Fah was only 23 at the time, with little industry experience, yet she had to build a team, divide responsibilities, and create a professional service workflow from scratch. "In life, we're never really ready for anything, but that feeling of not being ready is actually the best learning curve." That gluten-free vegan menu included hiyashi tofu with yuzu vinegar, ginger, salted kelp, and wasabi; a fried "chicken" burger with plant-based cheese macaroni and gluten-free bread; and Thai-inspired dishes like yum woon sen boran (spicy glass noodle salad), risotto tom kha gai (coconut chicken soup risotto), and pad thai.

Even before this project, Fah had already been researching raw vegan and plant-based cooking—this assignment just gave her a chance to put all that knowledge to use at once.

Fish Sauce and Venetian Sardines: The Details She Really Cares About

One of Fah's main pursuits is private dining and chef's table events, where every project brings a different brief—and she says she loves being challenged. One time, a client gave her free rein to reinterpret Italian cuisine using Thai ingredients: her Gnocchi di castagne al cacio e pepe used Chiang Rai cheese, Chanthaburi black pepper, and Thai snakehead fish, while her bruschetta al pomodoro featured tomatoes from Khao Yai. "That was the first time I felt like, this is really me."

When it comes to Italy, the place that left the deepest impression on her was Venice—and what she remembers most isn't pasta or tiramisu, but sarde in saor, Venice's classic sweet-and-sour sardine dish, because as a port city, centuries of Venice's trading history are woven into that one dish. Asked which Thai ingredient might be less familiar to Taiwanese readers, she named fish sauce: the type of fish, the fermentation method, the length of time—every variable changes the final flavor. "The things that seem ordinary are often the ones most worth studying."

These days, Fah produces two shows, YouAreWhatYouEat and Tastetalk, on the Wongnai platform, teaches Italian cuisine at the University of the Thai Chamber of Commerce, and runs her own ice cream shop, Groob Glace, in Hua Lamphong. Asked which dish best represents her, she chose spaghetti alle vongole—clams already carry enough depth and complexity on their own, memorable without needing much embellishment. "It's like when people listen to me tell a story or do a podcast—there's already something there, and when I talk about what I genuinely care about, people can feel that passion."
